I had such a great time yesterday sharing creative and healthy snack idea’s on Colorado’s Best. All recipes are superb fun and easy to do with the kids. 1. Breakfast quesadillas
You take 1 tortilla, I used one made from brown rice and spread Cherry Vanilla almond or KOLAT flavor of your choice and then add filling on one half. Have a variety of choices of fruits and veggies that are in season that the kids can choose such as, apricots, peaches, cherries, etc. Then place the second half on top and lightly brush each side with coconut oil. Place on grill until each side is golden brown, then cut into wedges.
2. Banana “sushi”
Take a banana and spread Dark Chocolate Coconut almond butter on top. Slice into bite size pieces and roll into sesame seeds.
3. No bake oatmeal blueberry walnut “cookie”
take a 1/3 cup of gluten free rolled oats (not instant kind), mix in 2 Tb of blueberry cinnamon walnut almond butter to give an extra antioxidant and omega 3 boost, 1/8 cup of almond milk, 1 tsp of local honey which helps with seasonal allergies. Mix all ingredients into a small bowl with your hands mush into a plate, place in fridge for 2 hours. Cut into squares. Serve with almond milk
4. Nutty Apple Sandwhiches: Core the apple. Slice the apple into thick slices, spread a layer of Cherry Vanilla Almond and sprinkle with gluten free granola or shredded coconut. place another apple slice on top and enjoy for breakfast or a mid morning or afternoon snack
